There are many ways to approach the swap but overall braking performance shouldn't improve much, assuming both are using the same pads and tires. IMO the increased thermal capacity would be the biggest benefit but that could also be managed on a PP with brake fluid, 2-piece rotors, and cooling.

Many retailers offer the Ford conversion kit. FTBR offers their version of the kit and also front or rear only kits.

Front GT350 caliper to GT knuckle mounts are available for GT350 15.5" rotors and PP 15" rotors. 15.5" rotors require a minimum of 19" wheels. Have not seen any info on the 15" rotor bracket with an 18" wheel. Pad changes require caliper removal.

The rear brakes probably prevent most from swapping because of the parking brake assembly. The parking brake is a drum style assembly that sits between the hub and rotor so everything from the knuckle outward needs to be changed along with the parking brake cables.

The average price of a new GT350 brake conversion kit is very close to an AP Racing front kit for the GT. The AP kit should provide more thermal capacity while being lighter.
