I agree with the Michelin A/S options, and I would also recommend the continental DWS06 plus. These are all season, not all weather. If you don't see yourself driving in snowy conditions often, the all seasons are perfect. I can't suggest to go square or staggered for your use case, but rotating...

I'm assuming you have factory active exhaust? If so, you can set exhaust mode irrespective of drive mode. If you don't have active exhaust, then track mode shouldn't make a difference in exhaust note.I have yet to hit up Laguna, but I've run Thunderhill in all configurations in track mode...
