I'm currently out at summit point and have an overheating or sensor issue. 2-3 laps in coolant temp goes all the way past red gradually but after driving for about a lap at lower rpms or going in to the pits for a moment the temp will shoot straight back to normal. Goes from full hot to normal in leas than a second. Then will rise back up over 1-2 laps. Never had any overheating issues before. Abient temperatures are about 95 degrees. 2013 Mustang gt. Anyone else ever have this issue before?

Try...
Check your pressure cap on the rad, make sure your fan is coming on, I think it's a 2 speed.
Burp the system.
 
Also, if you have or are planning to replace the water pump, make sure it has the plate on the impeller. The open ended ones bleed coolant at higher rpm.
 
From your build, it looks like you have the Boss grill. Silly question, but have you taken the block-off plates out of the fog light openings?
